Easy Cajun Style Garlic Tortellini Alfredo
Ingredients:
- 1 package of Buitoni Herb Chicken Tortellini or Mixed Cheese Tortellini (I like to mix the two)
- 2 teaspoons of minced garlic (I like to use the Spice World Minced Garlic in the squeeze bottle)
- 2 tablespoons of Olive Oil
- 1 cup heavy whipping cream
- heaping 1/4 cup sour cream
- 1 and 1/4 cup of shredded Parmesan cheese
- 1 bundle of asparagus
- 1 teaspoon of cajun seasoning
- 1 teaspoon (more or less based on your preference)
- 1 teaspoon of parsley
- salt and pepper to taste
Directions:
- Prepare the tortellini as directed on the package
- Rinse the asparagus and cut into 1 – 2 inch pieces
- Combine the remaining ingredients in a small pot, stir until well blended, and simmer over low heat until tortellini is done cooking
- Drain the tortellini and put back into the pot
- Our the sauce mixture over the tortellini and you are ready to serve
